MY FIRST TIER CAKE



Hello people, hope you are all having/or had a Caketastic day.

My post today is about sharing a picture of my first tier cake which happens to be my first wedding cake as well. It’s a bit late sharing the pictures (wedding was July 2012) but I thought since this blog is about sharing my experience I might as well share this.

I was excited about making this cake, a bit nervous I won’t lie but I think mostly happy. Everything I needed for the cake was ordered and ready weeks before the date, the second tier was a Fruit cake which I had to bake weeks in advance. Well the process was not smooth all through..... I made a terrible error of stacking the cake from the house so while transporting the cake to the venue; the car drove over bumps which made the cake shift and crack. As if that was not enough stress, after arranging and decorating the cake table, I noticed the cake began to slide to one side. At this point I just thought to myself I must be 'MAD' to have attempted this huge task but I remained positive and hoped that the reception would start quickly so that the couple could cut the cake in time for me to dismantle it and avoid any embarrassment. Yes, I survived, the cake did not collapse and I have also done another tier cake since then.

HOW TO 100: MAKE VANILLA CUPCAKES


Baking a cake is not as difficult or time consuming as most people think. I usually tell my friends and folks around that you don’t have to learn the professional aspect of cake making and decorating except that's your intention. So as promised here is a tutorial on how I make my vanilla cupcakes including pictures. It will take about 50minutes including baking time.

UTENSILS NEEDED
A Big Bowl
4 Little Bowls
Mixer (Hand mixer or Stand mixer or good old wooden spoon if you are ready to acquire some muscles)
Oven (of course)
A Spatula
Ice cream scoop
Measuring Spoon
Kitchen Scale
Cupcake cases
Cupcake tray

INGREDIENTS
200g Self Raising Flour (sifted)
200g Butter
200g Caster sugar
2 Eggs
1 Tablespoon of Vanilla extract
4 Tablespoons of Milk (optional)

PREPARATION
  • Pre heat your oven to 170c or gas mark 3
  • Put the sugar and butter in the big bowl and mix until fluffy and light

  • Add the vanilla extract and mix until well incorporated into the butter and sugar mixture
  • Then add the eggs one after the other and mix again

  • Finally add the flour and mix until the cake batter is smooth, occasionally you can stop to scrap down the sides of the bowl and continue mixing.

  • It’s the amount of air incorporated in the mixture that helps the cake rise and gives it that light and fluffy texture.
  • Use the ice cream scoop to divide cake batter into the cupcake baking tray and bake for 15 - 20 minutes
  • Once baked, place the cupcake on a cooling rack to cool completely before decorating.

DON’T DESPISE LITTLE BEGINNINGS



Hello everyone, hope you've had a Caketastic day. Just got in from work some few minutes ago and I thought had better post this as promised.

When I started making cakes I was clueless about cake decorating, I thought I could just swing it and of course watched a few videos on YouTube and I was like I could do this....hmmmm... that was not the case, sometimes I wonder what my first client was thinking when she told me ‘everyone loved the cake and wanted more’, I said to myself she must be joking, how could you possible like a badly decorated cake.  Anyway this post is to share some of my cakes in the past, am not very proud of the decoration and lettering but at least I started and am a lot better now.

MY CAKIE STORY

My name is Oluwayemisi and am going to be using this platform to share my journey into cake business as well as share tips on how to bake and decorate your cakes and sometimes may rant as well if am having a bad cakie day.  I will also share other things I love to bake i.e. pastries. Just to say quickly that i don’t see myself as the perfect baker yet but I believe am going to get there someday by God’s grace...amen.

So how did I get into baking...hmmmm... I will say I have always loved baking and Home Economics in Secondary school gave me abit of an idea on how to bake but that was it. I never went to a baking school to learn and have been self thought. I got bitten by the baking bug late 2011...lol.  Am a foodie, I love good food as well as desserts. My passion for baking started when I found myself in a situation that was beyond my control (sorry I won’t be going into details). I was out of work and I didn't know when I would be going back; daytime TV became my companion, I mean all I did then was wake up, eat, watch TV, eat again (yes sometime I didn't brush my teeth *covers face*), watch me some TV again, sleep, and the cycle goes on. My life was on full stop and I didn't know what to do about myself, and then I stumbled on a programme called COME DINE WITH ME. What I love about the program was the fact that they are all amateurs who like to cook occasionally like me and the best part is the sort of desserts they create. So one day in October 2011, I decided I was going to my local supermarket to get items to bake a cake.  Alright, the first cake that came out of my oven was no difference to a pancake; Thank God for my flatmate then who was my critic, she was my ‘taste bud’. I get her to try all my cakes including the flavor I come up with and always tell her to give me the honest truth, trust me she did.

Fast forward to November 2011, I went for a meeting and went with my home baked coconut cake and boom; I got my very first cake order for a friend’s graduation party (Ugochi). I was freaking out, I wasn't sure what I was getting myself into but I was determined to make the cake for her and that was how YeLashcaKes started and I have not looked back since then.

Thanks to my Mum for her continuous encouragement, my siblings Lanre and Jide, my fabulous friends (you know yourself), my cake sister who listens to all my rants and shares ideas with me Doyin and to my Aboki for keeping me focused. Love you all very much.

My next post will be more of visual and less words...promise not to bore you. Anyway am very excited that am finally starting this blog...too much procrastination. I will be sharing with you on my next post pictures of my early cakes...
